{"id":161500,"date":"2015-07-07T19:59:15","date_gmt":"2015-07-07T19:59:15","guid":{"rendered":"https:\/\/www.one.org\/us\/chicken-curry-and-ujeqe\/"},"modified":"2023-10-25T10:44:14","modified_gmt":"2023-10-25T10:44:14","slug":"chicken-curry-and-ujeqe","status":"publish","type":"post","link":"https:\/\/www.one.org\/us\/stories\/chicken-curry-and-ujeqe\/","title":{"rendered":"Chicken Curry and Ujeqe"},"content":{"rendered":"<h2>Steamed Bread (Ujeqe)<\/h2>\n<p><a href=\"https:\/\/one.org\/us\/media\/us\/2015\/07\/rsz_img_2723.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\" size-full wp-image-122500 aligncenter\" src=\"https:\/\/one.org\/us\/media\/us\/2015\/07\/rsz_img_2723.jpg\" alt=\"rsz_img_2723\" width=\"600\" height=\"700\"><\/a><\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>4 Cups of flour<\/li>\n<li>Half a teaspoon of salt<\/li>\n<li>&frac12; to &frac34; of a packet of instant yeast<\/li>\n<li>4 tablespoons of sugar<\/li>\n<li>1 &frac12; cups water, warm or cold but not hot and more as needed (mine used just under 2 cups)<\/li>\n<\/ul>\n<p><strong>Directions<\/strong><\/p>\n<ol>\n<li>Mix ingredients until combined<\/li>\n<li>Coat dough in 2 tablespoons of oil<\/li>\n<li>Cover and let rise for an hour, preferably in a warm place<\/li>\n<li>Fill the bottom of a large pot with one inch of water and bring to a boil<\/li>\n<li>Place dough in a metal bowl that fits inside the large pot with water<\/li>\n<li>Lower the heat to medium high and place bowl with dough into pot with water<\/li>\n<li>Place lid on pot and add more water as needed, approximately every 15 minutes<\/li>\n<li>Let steam for 1 hour<\/li>\n<li>Remove bread and cover with damp cloth on cooling rack<\/li>\n<\/ol>\n<p>Best served with chicken curry, recipe follows.<\/p>\n<p>&nbsp;<\/p>\n<h2>Chicken curry<\/h2>\n<p><strong><a href=\"https:\/\/one.org\/us\/media\/us\/2015\/07\/rsz_img_5406.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\" size-full wp-image-122503 aligncenter\" src=\"https:\/\/one.org\/us\/media\/us\/2015\/07\/rsz_img_5406.jpg\" alt=\"rsz_img_5406\" width=\"600\" height=\"425\"><\/a><\/strong><\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>1 Medium onion, finely chopped<\/li>\n<li>2 Cloves of garlic, minced<\/li>\n<li>1-2 Tablespoons of curry powder to taste<\/li>\n<li>Chicken &ndash; thighs and drumsticks work best (although you can also use chicken heart for the more adventurous!)<\/li>\n<li>3-4 medium tomatoes, grated<\/li>\n<li>1 spoon of sugar &ndash; sprinkle onto tomatoes before adding to pan<\/li>\n<li>1 small square of chicken bouillon, or &frac12; a large square<\/li>\n<\/ul>\n<p><strong>Directions<\/strong><\/p>\n<ol>\n<li>Saut&eacute; onion and garlic with curry powder until translucent in saucepan or skillet over medium high heat<\/li>\n<li>Place chicken in the pan<\/li>\n<li>Stir in grated tomatoes with sugar to the pan<\/li>\n<li>Add in chicken bouillon<\/li>\n<li>Cover and simmer for 45 minutes, until chicken is cooked thoroughly.
